PECTIN (which literally means ""to solidify"" ) is a non starch , structural polysaccharide found in fruits and vegetables , mainly in the cell wall.

Fruit (mainly citrus fruit and apple ) pectin acts like a sponge , soaking up cholesterol in food and preventing its absorption.

Citrus pectin, as per new research helps neutralize a protein called galectin- 3 that causes scarring of heart tissue, leading to heart failure. Pectin along with other substances decreases risk of heart failure by 37 % .

Industrially pectin is used as gelling agents and as thickeners. Best sources are oranges and apples...
